- 1 bunch (30g) watercress
Coating
- 1 tbsp tempura flour
- 🧂 Salt to taste
- Vegetable oil as needed
Batter
- 40g tempura flour
- 💧 50cc water

Trim the root ends of the watercress slightly. Place the watercress and 1 tbsp of tempura flour into a plastic bag and shake to coat evenly.

In a bowl, mix the tempura flour and water to create the batter.

Heat vegetable oil in a frying pan to 180°C (about 3cm deep). Dip the watercress into the batter and fry for about 1 minute until crispy.

Serve on a plate and sprinkle with salt to taste.
