Sheet Ingredients
- 100g cake flour
- 🥚 4 eggs
- 2 tbsp hot water
- 🧂 80g sugar
Filling Ingredients
- 🥛 180g heavy cream
- 🧂 15g sugar
Syrup Ingredients
- 🧂 1 tbsp sugar
- 4 tbsp water
步驟
Whisk egg yolks with a hand mixer for 30 seconds, then gradually add 35g sugar and hot water while mixing until thick and leaves a trail.
Whisk egg whites with a hand mixer for 1 minute, gradually adding the remaining sugar to create soft peaks.
Sift cake flour three times and gently fold it into the yolk mixture along with the meringue in 3-4 batches.
Spread the batter evenly in a pan and bake in a preheated oven at 200°C for 10-12 minutes.
Place the cooled sheet upside down on parchment paper, brush evenly with syrup made from sugar and water.
Spread whipped cream with sugar evenly over the sheet, roll tightly, secure with parchment paper, and refrigerate for 2-3 hours.
