    • 1 tsp chopped green onion

    • 🥚 1 beaten egg
  • Seasonings

    • 1/2 tbsp soy sauce
    • 2 tbsp vinegar
    • 🧂 1/4 tsp salt
    • 🍬 1 tsp sugar
    • 1 tsp grated ginger
    • 1/3 tsp chicken stock powder
    • 1 tbsp cooking sake
    • 💧 200ml water
  • Thickening Agent

    • 1/2 tbsp cornstarch
    • 💧 1/2 tbsp water
  • Toppings

    • 1 tsp chili oil

Make a shallow cross-cut at the bottom of the tomato. Boil water in a pot, blanch the tomato briefly, transfer to cold water, and peel the skin.

Trim the root of the enoki mushrooms and cut them into 2cm pieces.

In a pot, combine all the seasonings under 'Seasonings' and bring to a boil. Add enoki mushrooms and simmer on low heat for about 3 minutes.

Add the cornstarch slurry to the pot and stir until the soup thickens. Slowly pour in the beaten egg while stirring, and cook for 30 seconds to 1 minute before removing from heat.

Place the peeled tomato in a serving bowl, pour the soup over it, and garnish with chopped green onion and chili oil.
